Simple Frittata

When you make a frittata in a multi-cooker, the texture is perfectly soft, ideal for a beginning eater. Just let it cool, cut it into small pieces, and serve.

1½ cups water

Nonstick cooking spray

6 large eggs

½ cup whole milk

1 Pour the water into the multi-cooker. Place the flat steamer rack that came with the multi-cooker in the pot. Spray a 1½-quart round soufflé dish with cooking spray. Place the dish in a silicone or aluminum foil sling.

2 In a medium bowl, whisk together the eggs and milk. Pour them into the prepared soufflé dish.

3 Lower the dish in the sling onto the steamer rack. Lock the lid and set to cook on high pressure for 25 minutes. When cooking is complete, press “Cancel” and let the pressure release naturally for 10 minutes, then carefully quick-release any remaining pressure.

4 Using the sling, lift the dish out of the multi-cooker. Don’t worry if there is liquid pooled on top of the eggs, just dab with a paper towel. Let the frittata cool before serving.
